Ingredients
- Half a kilo of snails in the their shells, lightly boiled
- 1200 gr onions
- ½ liter olive oil
- pinch of pepper
- ½ bunch parsley
- 3 ripe tomatoes
- ½ kilo sweet potatoes
- ½ tsp sugar
- 2 cups water
- salt
Directions
In a saucepan, heat the oil and cook the onions until soft. Add the snails, the potatoes, salt, pepper and parsley. Bring to the boil and then add the sugar and tomatoes, simmering until the sauce starts to thicken. Add the water and boil until you have a well-blended sauce. This dish is preferably served hot.
