Pork pieces browned in fat and spices
Ingredients
- 10 kg of boneless pork
- 12 kg of pork fat
- 1 head of garlic
- salt
- pepper
- 4-5 bay leaves
Directions
Cut the meat into large bite-sized pieces and place them in a little water (without covering them) and bring to the boil. When the water has evaporated the meat begins to simmer in its own fat. Keep stirring but carefully so that the meat does not break up.
Add the garlic, pepper, bay leaves and plenty of salt.
Put the meat into a larger dish and set aside.
Heat the fat remaining in the pan until it melts, removing any small pieces that rise to the surface. Pour the fat over the meat, covering all the pieces. Add the pepper and let cool completely.
Cover and refrigerate.
Eaten on its own as an appetizer or with an omelette
